Tonight meatloaf is on the menu. We LOVE meatloaf! This is my mother’s recipe that I have enjoyed since I was a child. The bacon is what makes this meatloaf so delicious. It was very easy to adapt this to a gluten free version. We served it tonight with baked sweet potatoes and canned peas.

Meatloaf

1 lb ground beef
1 egg
1 Tbsp dried, minced onion
1-2 heels of gluten free bread, cut/ torn into small pieces (ie Udi’s or Rudi’s GF bread)
1 small can tomato sauce
1 tsp salt
1/4 tsp pepper

Topping:
Ketchup
2-3 slices uncooked baked

Mix all ingredients together with your hands, except the toppings. Transfer to a glass loaf pan. Smooth out top of loaf or round it and then spread ketchup on top. Then, place the bacon on top. Bake at 350* for 1 1/2 hours.
