Tonight was a night of easy cooking! Zatarain’s recently started labeling many of their rice mixes as gluten free. Tonight I made their Original Jambalaya Mix and added Hilshire Smoked Beef Sausage as the meat. I made Annie’s Rice Pasta & Cheddar Cheese as a side- it ended up being a pretty carb heavy meal, but it was tasty. I like to make Annie’s Mac & Cheese using the same “recipe” as Kraft – adding 2 Tbsp of butter and 1/4 cup of milk to the powdered cheese.

I built this corner of the internet after celiac entered our house and I realized I had to relearn how to cook from the ground up. Recipes I’d known by heart suddenly betrayed me, and my confidence in the kitchen disappeared overnight.
