Today, I made shredded chicken in the crockpot (see previous post- Shredded Chicken in Bulk). I decided to make BBQ Chicken Sandwiches. We have always loved fried onion straws…so I found a way to make some GF! For the sandwiches we used Udi’s hamburger buns with lettuce, a generous serving of mayo, and a healthy handful of onion straws. I flavored the chicken with KC Masterpiece BBQ sauce. As a side I made Baked Beans- see follow up post.

Fried Onion Straws

1/2 large onion
Canola oil for frying

Breading:
1/2 cup Bob Red Mill GF All Purpose Flour
1 tsp salt
1 tsp garlic powder
1/2 tsp black pepper
1 tsp paprika

Heat a minimum of a 1/2 inch of oil in a large sauce pan over medium high heat. Slice onion into very thin slices. Mix together the breading in a bowl. Toss a small group of the onions- separated out from the rings – into the breading until each piece is well coated. When the oil is hot- check it by placing one onion string into the oil and waiting for it to sizzle – add enough onion to create one layer in the oil. It is easiest to use a fork to toss the onions in the breading. When the onions begin to brown pull them out onto a paper towel. Repeat coating and frying the onions until they are gone.

Onions should be crispy when finished. Place them on top of the chicken in the sandwiches.
