When you want dinner in a hurry – bacon, eggs, and pancakes are a great option. Eggs are, of course, naturally gluten free. Frying up eggs are my husbands expertise, but he loves using an electric skillet to cook all the eggs at once. He uses Pam Original cooking spray to prevent them from sticking to the skillet. I have yet to find a bacon that is not gluten free- but please scrutinize all the package labels because they always use additives of some sort. We just fry the bacon on the stove in a pan.

Admittedly, we have not tried very many brands of GF pancake mixes. We always use Pamela’s GF Baking & Pancake Mix. We follow the directions listed on the package. Each batch is small- so for our family we need to double the recipe. I prefer to use real butter because then I don’t need to read labels but there are many gluten free margarines. I also generally use pure maple syrup because it’s easy to see it is gluten free but you can find other GF syrups.
