My Aerogarden is thriving and in much need of pruning- so I needed to use some fresh herbs tonight. The tenderloin came out very flavorful with just a few ingredients. I had never cooked with, or even heard of savory before planting my Aerogarden. It seems to bring a black pepper like spice in this dish. I served it with rice topped with butter and canned corn.

GF Pork Tenderloin

1 pork tenderloin
5 garlic cloves, pressed
2 Tbsp fresh basil, chopped into small pieces
1 Tbsp fresh thyme, chopped into small pieces
1 Tbsp fresh savory, chopped into small pieces
2 Tbsp olive oil
1 tsp salt

Combine all ingredients except the pork in a small bowl and allow to sit for an hour. The photo below shows how this olive oil mix should look.

Preheat the oven to 350*. Place the tenderloin in a roasting pan on a wire rack. Rub the olive oil mixture all over the tenderloin. Bake for 50 minutes or until meat thermometer reads 155*.

Slice thinly to serve.
