We were invited to a delicious dinner at my in-laws tonight. I will feature the zucchini recipe tonight. This recipe comes from a Taste of Home magazine Cheesy Zucchini Medley.
GF Cheesy Zucchini Medley
3 medium zucchini, cut into 1/4 inches slices
1 large sweet onion, sliced and seperated
1 yellow pepper, diced
1 green pepper, diced
2 garlic cloves, minced
2 Tbsp oil
1/4 tsp salt
1/4 tsp pepper
1 cup cheddar cheese, shredded
1/2 cup motzerella cheese, shredded
In a large skillet, sauté zucchini, onion, peppers, and garlic in oil. Sprinkle with salt and pepper. Stir in and then top with cheese. Allow cheese to melt.
