A huge sale on mussels prompted me to take a stab at making them for dinner tonight. They were FANTASTIC! They are quick and easy to make and taste as good as any restaurant preparation I’ve tried. I found this recipe at Safeway.
Steamed Mussels in White Wine
2 Tablespoons of Butter
1 Tablespoon Olive Oil
3 cloves of Garlic, minced
1/2 cup of onion, finely chopped
3/4 cup Chardonnay
3 lb Fresh, Live Mussels
Lemon Juice
2 Tablespoons Bay Seasoning (or Cajun)
Parsley
Salt and Pepper
Lemon Juice
Rinse mussels in cold running water and allow to sit in colander until you put them in the pot. Melt butter in a stockpot (that will fit all the mussels) over medium heat. Add olive oil, garlic, and onion and saute until onions are clear. Add mussels, wine, and juice of a approximately one lemon. Cover and bring to medium-high heat, allow mussels to steam for 5-10 minutes. All the shells should open. Add in spices and stir.
I served over GF linguine pasta.
